I love making healthy meals at home BUT I also want to do it in minimal time (I literally asked a friend to time me the other day to see if I could make my lunch in under 4 minutes … I had 15 seconds to spare haha 😂). This kind of noodle bowl is a regular for me at lunchtime because they can be made SO fast, especially if you meal prep ingredients for the week. If you’re feeling time poor, these are some of my other favourite healthy meals that can be made really quickly:
✅ BREAKFAST: Fresh tomatoes on sourdough toast with mozzarella, fresh basil, olive oil, salt, cracked pepper. If I want to mix it up I’ll add a poached egg which only takes a couple of minutes to cook – simple and soooo good!
✅ LUNCH: Tuna, brown rice, fresh basil, cucumber, tomato, peppers and red onion. My dressing is just olive oil, dried oregano, balsamic vinegar, salt and cracked pepper. This is one of my go-to lunches when I’m short on time!
✅ DINNER: Yiros/gyros loaded with fresh and healthy vegetables and your favourite protein … it’s just a matter of chopping it all up, and dinner is ready!
