✖️Overnight Chia Pudding ~
1 cup coconut milk (not from a tin)
1 1/2 tbsp maple syrup
2 tsp vanilla extract
1 tsp pink pitaya powder
1/2 tsp butterfly pea powder
1/4 cup chia seeds
– Mix the powders with some of the milk until a smooth paste is formed, add to the rest of the liquids & stir until well combined. Add the chia seeds, stir for a few minutes. Pop in fridge, after 15 minutes give it another stir then leave over night.

✖️ Nice Cream ~
3 frozen bananas {very ripe & pre-sliced}
60g frozen cauliflower {steamed before freezing}
2 tsp pink pitaya powder
1 tsp butterfly pea powder
50ml coconut milk (not from a tin)
– Blend all the ingredients in a high speed blender until smooth & creamy. I use my Vitamix which works perfectly.

✖️ Topped with ~ kiwi fruit, coconut flakes, desiccated coconut, puffed quinoa.
