Good morning ☀️ who wants to have the second jar of this creamy coconut chia pudding with blueberry compote? 💫 This coconut chia pudding is healthy and easy to make and is loaded with coconut flavour.
All you need is:
1/4 cup chia seeds
2 tbsp shredded unsweetened coconut
1 1/4 cup light coconut milk
1 tsp vanilla extract
2 tbsp maple syrup
Mix all the ingredients together in a bowl. Let it soak for 10 minutes, giving it a stir every 2-3 minutes.
For the blueberry compote: Add 150g blueberries, 1 tsp maple syrup, a pinch of salt and 1/2 tsp lemon zest in a medium sauce pan and cook over medium heat for 5 to 6 minutes until blueberries are wilted and soft.
Enjoy with your favorite toppings 🥣
